When I was a newly married woman, many years ago, I was told every family needs their very own homemade meatloaf recipe. I found a recipe in my first cookbook, a “Better Homes and Gardens New Cook Book.”  The meatloaf recipe said”Create Your Own Meatloaf” and boy did I.  After lots of trial and error, this is what I came up with.
My family loves this recipe. We hardly ever have leftovers. When we do, it is even better the next day. My husband tries to sneak a piece into the refrigerator to take for his lunch at work. This makes me smile.
Ingredients for Homemade Meatloaf:
2 pounds ground beef
2 beaten eggs
1 1/2 cup plain fine dried  bread crumbs (Panko are also good)
1/2 cup beer (This is a very important ingredient, I have tried making it with milk and even water, it’s just not the same.)
1/2 cup finely chopped onion
2 tablespoons dried parsley
1/4 teaspoon dried sage
1/4 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons bottles ketchup

Instructions for Homemade Meatloaf:
Preheat over to 350 degrees F.
In a large mixing bowl, combine all ingredients.  I use my hands to work the ingredients together.  I wash my hands well before digging in and after.  Even the kids  enjoy squishing the meat.

Place meat mixture in a loaf pan or, my personal favorite, a 10-inch iron skillet.
Bake at 350 degrees F for 45 minutes to an hour.  I use a meat thermometer to be sure it reaches 170 degrees internal temperature.

Meatloaf is a dish of ground meat mixed with other ingredients, formed into a loaf shape, then baked or smoked. The loaf shape is formed by either cooking it in a loaf pan, or forming it by hand on a flat baking pan.[1] Meatloaf is usually made from ground beef, although lamb, pork, veal, venison, and poultry are also used.

The meatloaf has European origins; meatloaf of minced meat was mentioned in the famous Roman cookery collection Apicius as early as the 5th century.[2] Meatloaf is a traditional German and Belgian dish, and it is a cousin to the Dutch meatball. American meatloaf[3] has its origins in scrapple, a mixture of ground pork and cornmeal served by German-Americans in Pennsylvania since Colonial times.[3] However, meatloaf in the contemporary American sense did not appear in cookbooks until the late 19th century.[1]
Many meatloaf recipes are interchangeable with meatball recipes, the distinction coming from shape and from the accompaniments or choice of sauce.

The ground meat is mixed with a binder such as eggs, breadcrumbs, small pieces of bread soaked in milk or red wine, wheat germ, finely ground almonds or oatmeal, to make it more dough-like. Chopped vegetables such as onions, green peppers and celery may be added. It is seasoned with salt, spices and herbs such as parsley. Meatloaf may be filled with eggs, cheese, vegetables and mushrooms. Some recipes add strips of bacon on top.[4][5] A regular oven is not required; meatloaf can be cooked in a slow cooker or in a microwave oven.
Austria
The Austrian meatloaf version is called Faschierter Braten. Most of the time it is not filled (e.g., in Germany), but it is wrapped in ham before baking it. Often it is served with mashed potatoes (when warm) or with sauce cumberland (when cold).
Belgium
The Belgian version of meatloaf is called pain de viande (except in Flemish-speaking Flanders). It is usually served warm and can then be served with various sauces, but can also be eaten cold with a loaf of bread.
Bulgaria
Rulo Stefani (Bulgarian: Руло Стефани).[6] The Bulgarian rulo Stefani meatloaf is similar to the Hungarian Stefánia meatloaf, with hard-boiled eggs in the middle.
Chile
Chilean meatloaf, known as Asado Aleman (German roasted meat) is a staple of southern Chile cuisine, especially in areas known for having been influenced by the arrival of German settlers during the 18th and 19th century. The most common recipe nowadays consists of ground beef, carrots, sausages, boiled eggs and breadcrumbs, cooked on the oven and normally served with a side-dish of mashed potatoes or rice.
Cuba
The Cuban meatloaf is called pulpeta. It is made with ground beef and ground ham, and stuffed with hard boiled eggs, and it is cooked on the stovetop.[7] The dish was brought to public attention, mistakenly referred to as a sausage, in the second episode of the third season of The Cosby Show entitled "Food for Thought".[8]
Czech Republic
In the Czech Republic, meatloaf is referred to as sekaná ('chopped'). It is optional to put hard boiled eggs, gherkins, or wienerwurst inside.
Denmark
Danish meatloaf is called forloren hare 'mock hare' or farsbrød 'ground-meat bread' and is usually made from a mixture of ground pork and beef with strips of bacon or cubed bacon on top. It is served with boiled or mashed potatoes and brown sauce sweetened with red currant jelly.[9]
Finland
Finnish meatloaf is called lihamureke. It is completely based on the basic meatball recipe. The only spices used are salt and pepper. It is not customary to stuff lihamureke with anything. The usual side dish is mashed potatoes, and lihamureke is usually served with brown sauce.
Germany
In Germany, meatloaf is referred to as Hackbraten, Faschierter Braten or Falscher Hase 'mock hare'. In some regions it often has boiled eggs inside.[10]
Greater Middle East
Kafta or kofta is a similar dish which the mixture can be made into hamburgers and kebabs. It usually has parsley in it.
Greece
In Greece, meatloaf is referred to as rolo (Ρολό) and it is usually filled with hard boiled eggs, although several other variations exist.[11]
Hungary
Stefania meatloaf (Hungarian: Stefánia szelet)[12] or Stefania slices are a type of Hungarian long meatloaf baked in a loaf pan, with 3 hard boiled eggs in the middle, making decorative white and yellow rings in the middle of the slices.
Italy
In Italy, meatloaf is called polpettone and can be filled with eggs or ham and cheese.[citation needed]
Jewish cuisine
In Jewish cuisine, meatloaf is called Klops (Hebrew: קלופס‎) and can be served cold or hot. It is sometimes filled with whole boiled eggs.[13] The source of the word might be German, Klops, meaning meatball.
Palestine/Lebanon
"Kafa" or "Kofta" (Arabic: كفتة‎) is a Middle Eastern version of meatloaf. It is usually beef or lamb mixed with onions, parsley, and various spices flattened into a square loaf and covered in either tomato sauce or tahini sauce. It is baked with the sauces and enjoyed with rice and potatoes (usually baked with the kafta). Kafta or Kofta is also turned into kebabs and grilled during the summer months.
Macedonia
Rolat is a similar dish to the chiefly Arab, though also Persian and South-Asian, kofta. Ground beef is rolled and cooked until brown. It can be cooked with vegetables and various sauces.
Mongolia
хучмал (khoochmal) is served with mashed potatoes cooked over the ground meat.[14]
Philippines
There is a meatloaf dish called embotido (not to be confused with the Spanish embutido) made of well-seasoned ground pork, minced carrots, sausages, and whole boiled eggs. The meat is molded into a roll with the sausages and hard boiled eggs set in the middle. Another variation of the dish involves wrapping the meatloaf with pork crow or mesentery. It is then wrapped in aluminum foil (historically, banana leaves) and steamed for an hour. The cooked embotido may be stored in freezers. It is usually served fried and sliced for breakfast. In some parts of the Philippines, the embotido is erroneously called "morcon". However, the Filipino morcón itself is another dish though prepared in a similar way.
Romania
In Romanian cuisine, there is a meatloaf dish called drob, similar to other minced meat dishes in the region like the Bulgarian Rulo Stefani or the Hungarian Stefánia meatloaf, the major difference being that it is always made with lamb organs (or a mixture of lamb organs and pork or veal) and the hard boiled eggs in the centre of the drob are optional.
South Africa
One of South Africa's most popular dishes is a form of meatloaf called bobotie. Food in South Africa varies by region, and bobotie is considered a Cape Town or Western Cape dish, but is so popular throughout the country that it is sometimes considered one of South Africa's signature dishes. It is a slightly sweet meatloaf flavored with curry spices, dried apricots and almonds, and is topped with whipped eggs. It arrived in South Africa several hundred years ago from the East Indies and became one of the signature dishes of Cape Town's "coloured" community.
United Kingdom
In the UK there are regional meatloaf dishes known as Haslet.
United States
In 2007, meatloaf was voted the seventh-favorite dish in the United States according to Good Housekeeping.[2]
During the Great Depression, cooking meatloaf was a way to stretch the food budget for families, using an inexpensive type of meat and other ingredients as leftovers; along with spices,[3] it was popular to add cereal grains to the meatloaf to stretch the meat. The tradition lives on with the merits of producing a lower-fat dish with superior binding and consistency.
The meatloaf is typically eaten with some kind of sauce or relish. Many of these recipes[15] call for pasta sauce or tomato sauce to be poured over the loaf to form a crust during baking. The tomato-based sauce may be replaced with simple brown gravy or onion gravy, but the meatloaf is prepared in a similar manner. Barbecue sauce, tomato ketchup, or a mixture of both tomato ketchup and mustard may also be used. American meatloaf may be garnished with plain ketchup or a "meatloaf sauce" consisting of ketchup and brown sugar mixed.

Vietnam
The Vietnamese meatloaf version is called giò. It's boiled rather than baked or smoked. There are many versions of giò that differ by the materials used.

Meatloaf Recipe #1 - Grain-Free Meatloaf withFlax Seed, Fennel, and Tomatoes, Fennel ( Gluten-Free - Low-Carb)

This meatloaf recipe comes with and idea of using flax seed meal instead of bread crumbs so the meatloaf would be grain free. Flax seeds contains very rich in nutrients ( besides omega-3 fatty acids, the seeds are rich in both kinds of fiber and they also contain a phytoestrogen called lignans )



original recipe: Kalyn's Kitchen - Grain-Free Meatloaf

Ingredients:
1/2 cup flax seed meal (Bob's Red Mill)
2 lbs. lean ground beef (< 10% fat)
1 cup finely chopped slow roasted tomatoes ( you can use sun-dried tomatoes (rinse with hot water if oil packed) or well-drained roasted canned tomatoes )
1 T ground fennel (Penzeys)
1 T dried parsley
2 eggs slightly beaten
1 T garlic powder
1 T dried basil
1 pkg. (19.5 oz.) hot turkey Italian Sausage
1 tsp. Vege-Sal (or 1/2 tsp. salt)
2 T dried chopped onion

Directions:

Preheat oven to 375 F. Spray roasting racks or loaf pan with non-stick spray.
Remove ground beef and turkey sausage links from refrigerator and let come to room temperature. In bowl, combine garlic powder, dried parsley, dried onion, , dried basil, ground fennel, Vege-sal or salt, and flax seed meal. (I purposely used dried herbs since I wasn't adding much binder to the meatloaf and I didn't want added moisture.)
Squeeze turkey sausage out of casings in small pieces into the mixing bowl. Break ground beef into pieces and place in same bowl. Add tomatoes, and eggs to meat mixture and use your hands to combine well. Try to mix the meat enough to get spices and eggs evenly distributed without overmixing.
Shape meat into two loaves. I prefer to bake meatloaf on a roasting rack as shown, so the fat can drip out. This meatloaf doesn't have a lot of fat, but using a rack also browns the meatloaf well on three sides.
Bake until the meatloaf is well done, 165F on the meat thermometer.  When I originally baked this in my toaster/convection, it was done in 1 hour 15 minutes.  This time it took about 1 hour 30 minutes in my large oven.  Cutting one meat loaf open is the still a good way to see if the inside is done to your liking (Remember this contains turkey and needs to be fairly well done.)

Ingredients:
1 ½ pounds ground beef, extra lean (raw)
¼ tsp dried marjoram
½ cup finely chopped onion
¼ tsp freshly ground black pepper
1 cup finely crushed fat-free saltine crackers (about 20)
2 garlic cloves, minced
2 tsp Worcestershire sauce, divided
1 tsp olive oil
¼ tsp dried thyme
1 cup ketchup, divided (1/2 cup each)
2 large eggs
1 tsp dried oregano
½ cup chopped baby bella mushrooms
2 T spicy brown mustard
½ tsp dried basil
½ cup finely chopped carrot

Instructions:

Preheat oven to 350°.
Spray a muffin pan with non-stick spray.
Heat the olive oil in a large nonstick skillet over medium heat. Add onions, carrots, mushrooms, dried oregano, minced garlic and 1 tsp Worcestershire sauce
Saute 2 minutes or until carrots are tender.  Remove from heat and cool
Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients except cooking spray in a large bowl
Spoon the meat mixture evenly into 12 muffin cups
Top each with 2 teaspoons ketchup
Bake for 35 minutes or until they reach 160° using a meat thermometer.  Let cool for 5 minutes
Serves 6 (2 muffins per serving)

The words "healthy" plus "meatloaf" might not usually get you excited but Taste.com.au members are adamant that this recipe is a winner!

Ingredients
500g extra lean beef mince
1 cup fresh wholemeal breadcrumbs
1 small brown onion, grated
1 carrot, peeled, coarsely grated
2 tablespoons tomato sauce
2 tablespoons flat-leaf parsley leaves, chopped
1 egg, lightly beaten
1/4 cup barbecue sauce
8 chat potatoes, halved
1 bunch Dutch carrots, peeled, trimmed
150g green beans, trimmed

Step 1
Preheat oven to 180°C. Line a baking tray with baking paper. Place mince, breadcrumbs, onion, carrot, tomato sauce, parsley and egg in a large bowl. Season with salt and pepper. Using clean hands, mix until well combined.
Step 2
Shape mince into a 10cm x 18cm rectangle. Place on prepared tray. Bake for 25 to 30 minutes or until firm to touch. Remove from oven. Drain excess fat.
Step 3
Spoon barbecue sauce over top of meatloaf. Return to oven and cook for a further 10 minutes or until top is glazed. Stand on tray for 5 minutes.
Step 4
Meanwhile, place potato, carrot and beans in separate microwave-safe plastic bags. Twist tops to seal. Microwave each on HIGH (100%) for 1 1/2 to 2 minutes or until almost tender. Slice meatloaf. Serve with vegetables.

A ground beef meatloaf recipe made with a special tomato sauce and bread crumbs, shaped into individual loaves for quick baking .

Ingredients
1 can (15.25 oz each) Hunt's® Dinner Starters Seasoned Tomato Sauce for Meatloaf, divided
2 tablespoons firmly packed dark brown sugar
2 tablespoons chopped fresh parsley
2 pounds ground sirloin beef (90% lean)
2 eggs, beaten
1 cup dry unseasoned bread crumbs
1/2 teaspoon salt
1/2 teaspoon ground black pepper

Directions
Preheat oven to 400°F. Combine half of the tomato sauce, brown sugar and parsley in small bowl; set aside.
Mix beef, eggs, bread crumbs, salt, pepper and remaining tomato sauce in medium bowl; blend well. Form into 8 oval loaves. Place in 13x9-inch baking dish.
Bake, uncovered, 15 minutes. Drain. Spoon remaining sauce mixture over meat loaves; bake 5 minutes more. Let stand 5 minutes before serving.

I found this meatloaf sauce in Target and decided to give it a try. My family LOVED it!!! It even beats the recipe my kids called "Mom's Famous Meatloaf" when they were lots younger. This Hunt's meatloaf will now take the place of my famous meatloaf; they all loved it more

Good, easy quick meatloaf, that I got my picky minions to eat. I changed it up a little by adding garllic leaving out brown sugar and using crackwers instead of bread crumbs!! YUM
